Awesome Tiramisu


A recipe of the most delicious and easiest Tiramisu you will ever taste and make. It’s based on a recipe of my late mother-in-law, the best amateur cook I have ever met!

You will need:

1 cup of icing sugar (250 ml)

1 pack of single cream (300 ml)

1 pack of double cream (300 ml)

3 packs of sponge fingers (approx. 175 gr each)

2 packs of soft cheese (250 gr each)

1-2 drops of vanilla essence

2-3 tablespoons of instant coffee

½ cup of brandy (approx. 120 ml)

1 ½ cups of water (400 ml)

2 tablespoons of cocoa powder

How to do it:

Whip the single and double cream until you get a thick mixture. Add the icing sugar and soft cheese and mix again until it’s fully blended in. Add the vanilla essence and stir/mix well. Set this aside while you work on the sponge fingers.

In a deep container add the water, coffee and brandy. Stir well. Then take the sponge fingers one by one and dip them in. I usually keep them underwater and count to 3, that’s what gives me the perfect absorption but does not make them too soggy. Every sponge finger that is dipped goes in a flat, medium size tray (the tray you pick should have enough depth to keep 3 layers of sponge fingers). Once you have covered the entire bottom of the tray with sponge fingers, add half of the whipped cream mixture and spread out evenly. Continue with the rest of the sponge fingers, dipping them and laying them on top of the cream. Finish with adding the remaining whipped cream mixture and spreading it out to create a flat top.

Finishing touch: sprinkle the cocoa powder using preferably a small colander. Perfect when enjoyed after 3-4 hours in the fridge.
